Groningen
Wide clay fields, villages on ancient mounds and moated manors. In Groningen the chefs cook what the land around them gives, and you sleep in a box bed, a windmill or the stadtholder's court.

Friesland
Lakes, Wadden islands and a language of its own. Friesland pairs a starred country estate in the Beetsterzwaag woods with small addresses by the harbour, in a greenhouse and out on the islands.

Drenthe
Heathland, dolmens and villages around a green. Drenthe is the province of manor houses and country hotels, where the kitchen draws on its own garden and woods and the evening ends by the fire.
Overijssel
From the canals of Zwolle to the estates of Twente and the waterways of Giethoorn. Overijssel has a remarkable number of starred restaurants with rooms of their own.

Flevoland
The youngest province, reclaimed from the sea. The choice is small and unpretentious: a tower room above the polder, fresh fish on Urk and a family hotel by the woods. This selection will grow with the province.
Gelderland
The Veluwe, the river IJssel and the Achterhoek. Gelderland is the land of hunting lodges, castles and estate hotels, with game from its own forests on the table and woodland as a back garden.
Utrecht
Country houses along the Vecht, estates on the Utrecht Hill Ridge and a monastery in the heart of the city. In Utrecht a starred dinner with a bed upstairs is never far from home.
North Holland
Canal houses with two stars, a family house by the dunes and a former rectory on Texel. North Holland offers the widest contrast, from grand hotel on the Amstel to a dike-side inn on the water.
South Holland
Country estates, lakes and old Dutch towns. In South Holland you sleep in a former orphanage, a water tower or a manor from 1751, with a starred restaurant or kitchen-garden cooking downstairs.
Zeeland
Land in the sea. Zeeland is the province of oysters, lobster and salty sea vegetables, with starred chefs cooking what the Scheldt and the polder provide and rooms that look out over the water.

Castles, woods and generous southern hospitality. In Brabant you dine with two stars in a fourteenth-century castle and sleep in a tower suite, a former barracks or the oldest hotel in the country.
Limburg
Hills, vineyards and castles built on marl. Limburg is the southernmost chapter and one of the richest: two-star kitchens, terraced castles, monasteries and castle hotels to stay in after dinner.

- How we choose
- You dine and sleep under one roof, and the house has a character of its own. There is no limit per province: whatever belongs here goes in. We leave chains aside.

- Every address gets a score for food, stay and price. 22 addresses hold a Michelin star, but the night and the price count just as much as the plate.
