Dining and staying at Van Oys Maastricht Retreat
With 81 rooms and suites, Van Oys is bigger than the places we usually go for. It still made it into our diary, and that's down to a barn.
In that converted barn, on a castle estate by the Maas in Eijsden, you'll find Create by Guido Braeken. An installation of a chestnut tree hangs from the ceiling, and that image alone makes us curious. Braeken used to cook at Julemont in Château Wittem and earned the same recognition from Michelin again at Create.
If you don't fancy a big dinner every night, there's choice: restaurant Maes, Cuisine du Terroir and Wine Bar César are part of it too. There's also the Oysana Spa, and the hotel belongs to The Leading Hotels of the World. So this isn't a small house where the chef greets you in person. It's a large estate with an exceptional restaurant at its heart. Come for Create, and the rest is a pleasant extra.
