Dining and staying at Grand Hotel Karel V
A hotel with a hundred and twenty-one rooms is bigger than we usually go for. At Karel V we happily make an exception, and the building is the reason. The Teutonic Order founded the complex in 1348 as a monastery and headquarters, Emperor Charles V stayed there in the sixteenth century and from 1823 it served as a military hospital. After a conversion that ran until 1999 it became a hotel, with a private garden of ten thousand square metres in the heart of the old town.
Leon Mazairac cooks at Restaurant Karel 5 in the medieval refectory, with maître Marco Westra running the room. For something simpler there is Brasserie Goeie Louisa in the oldest monastery kitchen, with chef Jules Borninkhof and host Koen Roelofs. Two kitchens in one monastery suits us nicely. There is also a spa with a pool and sauna. For a city weekend where you needn't go back out after dark, we know few better places in Utrecht.

Pack your swimming things: the hotel has a pool and a sauna.
