Dining and staying at De Watergeus
Sometimes we don't want a hotel with a lobby and a porter, just a proper restaurant where you can stay the night once dinner is done. De Watergeus is exactly that. The house sits right on the Nieuwkoop lakes and some of its eleven rooms look out over the water. Ask for one when you book, because waking up to the lake or not makes quite a difference.
The kitchen sources as much as it can from close by and the menu changes every two weeks. We take that as a good sign: it means they cook with what's around, not with whatever has always been on the menu. If you have time during the day, boat trips with a picnic hamper leave from the house. Luxury in the marble-and-butler sense you won't find here. Peace and quiet you will, and that's what we came for.
Good to know
The restaurant is closed on Sundays and Mondays, so plan your night around that.
