Dining and staying at De Swarte Ruijter
Erik de Mönnink takes his cooking from the woods. Mushrooms, game, and vegetables from the kitchen garden or from nearby farmers. He has held a Michelin star since 2016 and kept it every year since. Esther de Mönnink is the host, and like Erik she holds the SVH master title in her field. Two people who both know exactly what they're doing, under one roof: we find that reassuring.
The house is a thatched villa from the 1930s on the slope of the Holterberg, right next to the Sallandse Heuvelrug National Park. What you see on an afternoon walk ends up, more or less, on your plate that evening, and we like that logic. You sleep in one of ten garden rooms. A room on the garden after a long dinner, with the woods round the corner: that's all we need.
Good to know
Bring walking boots, as the Sallandse Heuvelrug starts on the doorstep, and with only ten rooms it's wise to book ahead.
