Dining and staying at AEST
Thirty seats. That's all there is in Sander Wever and Michel de Kivit's restaurant in Hoorn, on Terschelling. The two met in 2012 at De Librije in Zwolle and in 2024 took over the old De Koegelwieck building. Sander runs the kitchen, Michel is maître-sommelier. There are surprise menus of three to six courses, using as much from the island itself as they can.
After dinner you sleep in one of four suites named after places on the island: De Koegelwieck, De Waddenzee, De Boschplaat and Het Groene Strand. The garden room has its own entrance, its own garden and a jacuzzi, and that's the one we'd ask for first. Breakfast is served at the table, with produce from local suppliers. Next door stands the Sint Janskerk, from around 1250, the oldest building on Terschelling. So you're sleeping beside something that has been there for nearly eight centuries. Puts things in perspective.
Good to know
You'll need the ferry, the restaurant opens Tuesday to Saturday, and it closes from late November to mid December and from late February to mid March.
